Vinification : Destalking fermentation in concrete or wooden open vats with continual temperature checks. During this 15–21 day period the winemaker repeatedly works the must with punch down and pump-over.
Maturing : In casks /u0022/gdemi-muids” (oak barrels) or vats for 12–18 months. The wine is bottled on the estate.
